Think of Skyscale as a "legendary mount". Like all legendaries you don't really need it for anything, but like all legendaries, it allows for a lot of QoL and convenience. In this analogy a Griffon and a Beetle would be your "ascended" mounts based on their usefulness and the rest "exotics".
If you're worried about the gold, or don't think you could make that much again any time soon, you don't need it - but it's a super fun mount that being said. Skyscale is more of a quality of life mount while Griffon just feels more fun (imo), for many of the reasons people have already said. The speed, the challenges, etc.

The Skyscale is an awesome mount and is an excellent addition to the mount roster. However it has one major flaw like the Griffon: it's a bird that really can't fly. I'd have to say this is one of the most annoying things Arenanet has done in the game - given us a flying mount that can't maintain flight.
